No Boil, no Carbs, no problems… You have been asking for a zoodle recipe for a while, especially after you saw the effort on my youtube channel, thanks for the support with that one! Not only is it colorful and noodle like, and can be devoured in a bowl, but it is oh so tasty. Here is a super easy healthy pasta recipe that you can do in less than 10 minutes (less than the time it takes to cook Pasta 😉 )

If you are after that spaghetti like feeling whilst being on a low carb schedule then do I have some fun for you! When it comes to creating a dish for a blog, there are a couple of things that make the decision process come to be. First you must think of what your awesome audience and friends want… (you all love zoodles and healthy goodness). Then it must be true to something you enjoy (I love pasta-who doesn’t- and this colorful vibrant number is a weekly go to for me). Naturally you must also think about what is naturally going to be appeal from an Instagram perspective ;)…

In this case seafood is known to not always do the best, but I think shrimp/prawns are one of those things that go oh so nicely with the goodness of spaghetti and at the end of the day you have to be truthful to the healthy voice in your heart. So if you prefer chicken, meat or mushrooms I reckon you should just do that instead #winning

Health Facts:

Shrimp/prawns offer the brain essential fats and minerals such as Iron that can often get neglected. It is essential for blood production and carrying oxygen around to the cells. So iron is like the older brother we never give enough credit to for looking out for us 😉 This dish is also very carb-less with still that Italian Pasta feel. So you are ticking all forms of wins with that going on. For all those gluten free legends, it looks those boxes too!

Ingredients:

1 Tbsp Paprika

1  tsp Cayenne

1 Garlic, finely chopped

Pinch of Salt & Pepper

10 Shrimp, uncooked and shell removed

1 Tbsp Cobram Estate Olive Oil + 1/4 Cup

1 Avocado, skin and seed removed

1 Handful Fresh Basil

1/4 Cup Almonds

Juice & Zest of half a Lemon

1 Zucchini, spiralized into ‘Zoodles’

1/4 Cup Parsley, chopped

Method:

  1. In a bowl combine the paprika, cayenne, garlic, salt, pepper and shrimp
  2. Add oil to a frypan on medium-high heat add turn out shrimp, cooking on each side for 2 minutes or until a beautiful red color is formed.
  3. In a food processor combine your avocado, basil, almond, lemon juice and zest with a pinch of salt. As it gets smooth gradually add a 1/4 Cup of the olive oil. Turn out pesto into a bowl
  4. Combine the zoodles and avocado pesto before serving into a coupe of bowls and serving with shrimp, parsley and an extra squeeze of lemon juice (if there is any 😉
