After my time in the South of France and seeing some of the most beautiful strawberries imaginable at local markets I felt inspired to show you an easy healthy summer dessert recipe you will ever make. Just take a look at the length of the ingredients list.

Before we go on, what exactly is a clafoutis? Well simply put it is a french style dessert, given the name the country makes sense, made of fruit with the base of a flan like batter. I was fortunate to try a slice of one in a beautiful hidden away restaurant in Nice. That one was made up of figs, but apparently the fruit changes daily depending on what is at the market.

The first bite was as if you had jumped on a cloud and started flying. Its super light, almost as if you feel cheated for not taking a big enough bite. I asked the waitress what was in it, luckily she spoke english, so after some creative thinking and some local market inspiration. I thought of a way to cherish the culture and traditions of the south of France whilst bringing you a bit of nourishment at the same time.

This is mix in one bowl and pour scenario, you can just use a hand whisk too, so that is even less washing up. Unlike other cakes it only takes about 15 minutes to cook. So in the event that you are having friends over, its a super quick really simple dish that you can actually complete in  little time. The strawberries have just been too good recently, and by using coconut flour I feel it gives a lovely nectar sweet lightness to it.

Prep Time: 5 minutes, if that

Cook Time: 15-20 minutes

Health Facts: Strawberries offer some amazing great anti oxidant support, not to mention slow release energy too!

Ingredients:

2/3 Cup Coconut Flour

2 Tbsp Honey

3 Eggs

3/4 Cup Coconut Milk or Cream

1 Cup fresh Strawberries, halved

Method:

  1. Preheat oven to 475F. or 245 C. (thats hot) and grease a 9 inch round cake or flan tin with butter or oil
  2. Whisk all the ingredients (except for those lovely strawberries together to make a consistent batter and pour out into cake/flan tin.
  3. Arrange the strawberries cut side up, giving enough space between each and bake in the oven for 15-20 minutes. Allow to cool for 5 before slicing up and enjoying.
