When your involved with food, making friends is pretty easy… so when my new mate, style and fashion blogger, Justin Livingston wanted to know how to make a super simple affordable curry, i couldn’t not invite him onto the fire escape and teach him how to do it for less than $3…

You can use the paste in any curry.. it is the base of sooo many regions of South East Asia… from there they all add there own specific spices and local delicacies… on the fire escape it is all about the color 🙂 Instead of all the spices you can just add 2 Tbsp of Curry powder #Winning

Ingredients:

Paste

1 Tbsp Oil

2 Garlic cloves

1 Onion, chopped

1 lemon grass stalk

1 Red Chilli

Spice mix

1 Tbsp Turmeric

1 tsp Chilli Powder

1 Tbsp cumin

2 tsp coriander

Pinch of Salt

Pinch of Pepper

1 Cup Coconut Milk

3/4 Cup Vegetable stock

1 Cup Assorted chopped veggies (i did squash, broccoli, mushrooms)

Juice of half a lemon

1 Cup Brown rice

Method:

  1. Put all the paste ingredients into a blender and blitz until its combined
  2. On medium heat stir the paste until most the water has evaporated and its super aromatic 🙂 (4 minutes)
  3. Add in the spices, stir for 1 minute before pouring in the coconut cream to combine that yelllowy goodness 🙂
  4. Pour in the stock to thin it all out… bring to a simmer and then add in your vegetables… cover with a lid, turn heat to low and allow flavors to get to know each other for 15-20 minutes
  5. Cook rice to packets instructions.
  6. Season sauce with salt, pepper and lemon juice and serve on top of the epic rice yewwww!!!!
