Easy Chocolate Chia Pudding

My healthy cooks, this chocolate chia pudding is a game changing breakfast dish perfect for those weekdays when you want something in the fridge ready to go. Add your toppings and you are off to start your day! I’m making this with my own favorite toppings, granola and my berry compote which we add to the chia pudding at at Charley St, but you can feel free to get creative and be your epic selves with this one!

What makes this chocolate chia pudding healthy?

This pumpkin oatmeal combines my favorite forms of complex carbohydrate – pumpkin! It’s in the squash family and is an awesome addition to any sweet breakfast as it contains so much natural sweetness that your body loves and helps you prepare for a busy day.

The color code for this recipe is BROWN! Brown foods are often loaded with fiber and healthy fats for the brain! Think walnuts and the cacao nibs we’re using today. As such they’re great for digestion and neurological health.

Three important things to keep in mind when making this chia pudding:

  • Your ratio – we’re using a 3:1 ratio here of liquid to chia, but you can customize the ratio depending on how you like your pudding.
  • Flavour – adding our maple syrup, sea salt and vanilla to this will bring out a lot more flavor than you would get if you simply mixed the chia with liquid!
  • Texture – to take this one up a notch texture-wise, we’ve added granola, fresh fruit, and our seasonal fruit compote on top. It also helps for presentation, so you’ve got an Instagram-worthy dish when you’re finished!

What makes this chocolate chia pudding recipe easy?

This is such a simple one guys. Really it’s a make ahead recipe that you can have ready to go in your fridge the next morning with no stress involved. Just shake all the ingredients up in a jar or stir together in the bowl and you’ve got breakfast served for the next morning.

Recipe: Easy Chocolate Chia Pudding

Prep Time: 2 minutes + overnight resting time

Cook Time: 0 minutes

Serves: 3-4

Ingredients:

1.5 cups almond or coconut milk
0.5 cups chia seeds
Pinch of salt
1 TB maple syrup
1 tsp vanilla extract
2 TB cacao powder
2 TB cacao nibs

Toppings:
Fresh strawberries, sliced
My berry compote

Method:

  1. Night before serving or at least 4 hours prior, start by blending together dates, cacao, and milk. Dump into a jar. Stir through the chia seeds and add a pinch of salt. Place in fridge.
  2. The day of, top pudding with a dollop of yoghurt, fresh or frozen raspberries, and cacao nibs. A sprinkle of flaky sea salt or a light dusting of cacao is also delicious here!
