Now I am sorry but you know how much I love to break the rules… I mean if someone said that you could put chocolate and ‘good for you’ in the same sentence you would have thought you would have had a more honest conversation with Pinocchio. But let me explain… and please try to quickly concentrate so you can scroll down and check out the simplicity of the recipe in a second… Cacao is the fundamental ingredient of chocolate. It gives it that bitterness, it is only sweet when we had sweet things to it. Cacao is one of the richest antioxidant ingredients in the world. Meaning it fights off cancer producing free radicals… it also contains vital secondary compounds for regular cellular functioning. Then we have Chia… the super sponge that soak up to 20 times its volume in liquid allowing to to attain that jelly like epic marshmallow texture (yeah that is a serious win!). Chia contains all these amino acids which are the building blocks for proteins. Not only are they required for muscular repair but everything in your body is made up of these amino acids… all the living tissue we have is made up of all these tiny puzzle pieces of amino. Sooo in short they are like our Lego blocks and yes we need them 🙂

So the main ingredients are quality for you… and the taste (and you know my rules… it must be delicious otherwise its not healthy), the taste is phenomenal… that sweetener comes down to your choice, but I use rice malt syrup for its subtle sweetness and also it has a lower fructose count, but honey also does wonders. With the texture of coconut and the added spice of cinnamon I would like to say you are welcome :)))))

As you soak the Chia seeds overnight they get this caramelised jelly like texture, quite impressive considering how good they are for you. But more importantly they replicate that chocolate yoghurt cup you used to have for recess at school, only difference is this is full of quality ingredients to benefit your internal state. Dish it into separate small containers for kids morning tea.

Ingredients

  • 1 cup Cashew/Almond milk
  • 1/4 cup Chia seeds
  • 2 tsp Desiccated Coconut
  • 1 tsp Cinnamon
  • 2 tsp Cacao
  • 1/2 tsp vanilla extract
  • 2 Tbsp Honey

 

Method

    1.    Combine nut milk and chia seeds in a jar or big glass and leave in the fridge over night
    2.    Remove from the fridge and combine the remaining ingredients.

NB: You can also add protein powder if you are struggling to hit that protein in your day. Just don’t provide this one to the kids. You can always make separate batches 🙂
