Crispy colorful breakfast potatoes

This is one of my own personal gluten-free favorites, because it involves just a few simple and colorful ingredients… how gorgeous are those crispy purple potatoes!? I topped them with fried eggs for some extra protein but feel free to skip if you are vegan. They are amazing on their own with that bright red harissa sauce and some creamy yogurt to dip into. Healthy Eggs Benedict with Creamy Avocado Hollandaise Sauce

Another absolute fan favorite is this take on a diner classic, Eggs Benedict! It can be hard to make such a nostalgic dish taste quite as good while having those good-for-you benefits. But I think we have a winner with this avocado Hollandaise. Major heart eyes for this recipe, and it’s the perfect one to serve to a crowd. Add an extra protein with some smoked salmon if you wish!
