Dad’s Chile Con Carne

Ingredients
3 garlic cloves, finely chopped
1 yellow or white onion, finely chopped
½ teaspoon kosher salt
½ teaspoon ground black pepper
1 pound ground bison,
1 Tbsp tomato Paste
One 14.5-ounce can kidney beans, drained
One 14.5-ounce can crushed tomatoes
1 cup low-sodium beef/chicken stock
1 tablespoon ground coriander
1 tablespoon paprika
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon chili powder
2 red bell peppers, seeded and diced
Method
- Heat the olive oil in a large pot over medium-high heat until it shimmers. Add the garlic, carrot, celery, and onion and cook, stirring occasionally, until softened, 5 to 7 minutes. Stir in the fresh chili, salt, and pepper.
- Add the turkey, stir well, and cook, breaking it up into irregular pieces as it cooks and bumping up the heat if necessary to get some color, until it’s fully cooked and golden brown in spots, 5 to 7 minutes.
- Stir in the beans, tomatoes, stock, coriander, paprika, cumin, oregano, chili powder, and bell peppers. Bring to a boil, cover, and reduce the heat to cook at a gentle simmer for 30 minutes to meld those flavors. Season with more salt and pepper and serve.
