Traybakes are lovely for busy days, meal prep, and feeding many people. With minimal preparation and skills needed, traybakes are here to save the day and make wonderful lunch and dinners. For this traybake recipe, we were inspired by Mediterranean flavors. Rich in protein, carbs, fats, and fibers, this dish is a team’s favorite.
Is Chicken Healthy?
Chicken is a popular white lean meat. One serving of chicken breast (3oz or 85g) contains 24g of protein and 3g of fat. Chicken thighs and legs are often a little more caloric and have more fat. Low in calories and rich in protein, chicken is a healthy source of animal protein. It is also rich in niacin (vitamin B3), selenium, and vitamins B6 and B12. These nutrients help break down macronutrients and to turn them into energy, form DNA, and promote a healthy nervous system, amongst other things.
Can I Use Other Chicken Cuts?
Absolutely! We love using chicken tights for this recipe, but if you want a leaner alternative, use chicken breasts. You can even replace the chicken by using turkey!
Ingredients
Tray
- 4 chicken tighs
- 1 onion, roughly chopped
- 2 Zucchini, sliced
- 2 Eggplants, sliced
- 2 russet potatoes, sliced
- 1 cup olives
- 2 tbsp olive oil
- Salt
- Pepper
- Thyme
- Rosemary
- 1 tsp dry basil
- 2 Lemon
Sauce
- ¼ cup tahini
- 1 lemon
- 1 tsp garlic powder
- 1 tsp dry basil
- Salt
- Pepper
Method
Tray
- Preheat the oven to 375F.
- In a pan on medium-high heat, drizzle olive oil. Once hot, sear the chicken on the skin side for about 6-7 minutes.
- Roughly chop the vegetables and slice 1 lemon. Transfer them to a tray. Add the lemon slices, herbs, and olives. Drizzle olive oil and the juice of a lemon. Sprinkle salt and pepper. Toss everything together.
- Add the chicken (skin up) on top of the vegetables
- Roast for 30-35 minutes.
Sauce
- In a bowl mix all the ingredients for the sauce. Serve with the chicken and vegetables.
