Roasted Brussels with Sweet & Sour Sauce

The most unbelievable side that anyone can make! Brussels are a part of the cruciferous family and contain high amounts of sulforaphane which builds your body’s internal defense system in antioxidant… and they crispy, with a delicious sweet tangy sauce

Ingredients

2 cups of Brussels sprouts, stem removed and halved

2 Tbsp Olive oil

Pinch of salt & Pepper

Dressing

2 Tbsp Balsamic

4 Tbsp Olive oil

1 Tbsp Cold water

Method

  1. Preheat your oven to 420 F or 215 C. In a bowl combine your Brussels sprouts, olive oil, salt and pepper. Mix it together before turning onto a sheet tray and roasting in the oven for about 15 minutes or until golden brown
  2. In a salad bowl add your vinegar, salt and pepper and the gradually whisk in your olive oil until it combines. Add a splash of water to thin it out, before adding int the Brussels and giving them a toss through before serving
  3. Crispy and covered in this epic sweet and tangy sauce!
