Hello my healthy cooks, this week I’m making super easy dairy free ice cream! Yes that’s right this one is perfect for summer, completely vegan, and great for post workout too. You’ve all been asking for more vegan recipes and this one is such a winner and so easy to make. We’re going completely added sugar free, gluten free, and dairy free!

This recipe is one of those where you’re just adding everything to a blender and letting it do its job. Very little hands on time, and you get to enjoy an amazing dairy free sweet treat at the end of it all!

What makes this easy dairy free ice cream healthy?

With this dairy free ice cream recipe, we’re focusing on the beauty of using vegan and gluten free whole food ingredients to create an ice cream that tastes just as good, if not better, than something loaded with refined sugar and dairy which can be upsetting for some! You’re left with a treat you could enjoy as a great snack, dessert, or breakfast. The options are endless!

We are using bananas as a natural sweetener, plus coconut milk for healthy fats and peanut butter as a fat and source of protein. We’re also adding some plant based protein to this recipe to make it great for post workout too.

Recipe: Easy Dairy Free Ice Cream

Servings: 4-5
Cost: $2-3 per serving
Prep Time: 5 minutes
Cook Time: 10 minutes

Ingredients:

1/2 cup coconut milk
2 frozen bananas, broken into chunks
2-3 TB peanut butter, plus extra to drizzle on top
1 pinch of salt
2 servings plant based protein powder (optional)
Plus any add-ins you like!

Method:

  1. Add all ingredients to your blender starting with the coconut milk.
  2. Blend on high until everything is fully combined.
  3. Pour into a loaf tin to freeze further, then scoop into a bowl, or enjoy right away!
  4. Drizzle extra peanut butter on top for good measure.
