High protein lean burger

This is the dish that made me no longer sleep on chicken burgers. Incredibly juicy, if you know how to cook them, High in protein and contains a lot of the essential micronutrients we often overlook! Some people struggle to digest red meat, if that is you smash this burger!

Ingredients

1 red onion, thinly sliced

1/2 cup vinegar

Pinch of salt

1 cucumber, sliced thinly

1 lb Force of Nature, ground chicken

2 tsp cumin

2 tsp coriander

2 tsp butter

 

Yoghurt Dressing

1/2 cup greek Yoghurt

1/2 bunch of dill, finely chopped

1 Tbsp dijon Mustard

Juice of half a lemon

 

To Serve

1 Avocado, thinly sliced

bib lettuce

Burger Bun, toasted (I went with ciabatta)

 

Method

  1. Begin with your onion pickle, in a mixing bowl (not metal), combine your onion and vinegar with a pinch of salt, set aside for 20 minutes or best is overnight
  2. In another bowl add ice and water and dunk your thinly sliced cucumbers inside
  3. For the dressing, mix all the ingredients until well combined (I like to make a big batch of this so a I put it on a ton of my meals)
  4. For the patty, in a bowl combine the ground chicken, spices, with a pinch of salt and pepper, but be careful not to over mix. You do not want to the meat to tighten up and become tight. Carefully roll into 150g balls
  5. Add oil to a pan on medium high heat, add the paddy to the pan and press down, using a weight, cooking for 2 minutes on either side. Finish with a bit of butter to based
  6. To serve,
