ANZAC Day Coconut Baked Oatmeal

My healthy cooks, today I’m bringing you a super easy and deliciously flavorful recipe to celebrate ANZAC Day! If you aren’t familiar, that is a day of honoring those dedicated in service who have fallen in the AUS and NZ. It’s also got some celebratory foods involved… including the famous ANZAC biscuit. Naturally, today we’re recreating the flavors of that yummy cookie into… a baked oatmeal you can eat for breakfast!

This breakfast bake is simple, budget-friendly, satisfying, texturally incredible, and an easy bake-and-wait dish to last you for an entire week’s worth of meals.

What makes this baked oatmeal recipe healthy?

This baked oatmeal is a healthy, gluten-free and customizable breakfast to keep you fueled up. It’s got complex carbs from our oats, healthy fats from the egg, coconut, and coconut milk (or almond if you choose!) and antioxidants from our berries.

This one is a great way to start your morning, when you’re setting up for your energized day. Your body processes carbs throughout the day giving you the energy you need to thrive, work out, and go about your work. So morning (or pre/post workout) is a great time to get your baked oatmeal on!

What makes this healthy baked oatmeal recipe easy?

This healthy baked oatmeal is so next level yet so simple. All you’re doing is whisking together the ingredients, giving it a bit of time to set up, and then letting it bake and do its thing while you chill out and relax. Once you pull it from the oven, get yourself ready for at least a week worth of breakfasts! You can also have this one for dessert or snack on it.

Recipe: Healthy Coconut Baked Oatmeal

Prep time: 5 minutes

Ingredients:

2 cups rolled oats
2 cups almond or coconut milk
2 eggs
2 TB melted coconut oil or butter
¼ tsp cinnamon
1 tsp vanilla extract
½ cup coconut flakes (¼ cup goes into the batter, then save the other half for topping)
2 TB honey (optional)

Toppings
1 cup plain yoghurt
¼ cup coconut flakes
Berry compote (check out the recipe here!)
Fresh berries

Method:

  1. Start by dry toasting all of your coconut flakes for topping in a pan over low heat for about 1-2 minutes. Watch them like a hawk so they don’t burn! Set aside for later.
  2. In a baking dish (22×35 cm works well, which is 9×14 in inches), add your eggs and whisk up. Then add in all your other ingredients, including half of the coconut flakes.
  3. Stir well, and set aside for 15 minutes to soak. Then preheat the oven to 375 F (190 C). Bake for 35-40 minutes until crispy on top.
