Ingredients
- 1 bullseye Chilli
- 1 knob of Ginger, grated
- 1 Tbsp Soy Sauce Juice & zest of 1 Lime
- 2 tsp Fish Sauce
- 1 Tbsp Honey
- 1 Garlic clove, grated
- 1 Lemongrass, finely chopped
- 600 grams of Chicken thigh, excess fat removed and chopped into large cubes
- 1 tsp Sesame Oil
- 1 tsp Sesame Seeds Handful of fresh Coriander to serve
METHOD:
Add all ingredients except the chicken into a bowl and mix Add the chicken to the bowl, cover with glad wrap and marinade for a minimum of 30 minutes or overnight Soak skewers in water for 20 minutes so they don’t burn. Thread the chicken onto the skewers 3 pieces is wicked!!! Preheat your BBQ or frypan to medium high heat and add sesame oil then apply chicken to the heat and give it a little shake. Cook for 3-5 minutes continuing to turn until golden brown and repeatedly based with marinade to enhance flavour. Top with sesame seeds and garnish with fresh coriander yewwww!!!
