Let’s pimp your hummus and give it some summery vibes! How can you do that, you might wonder? You can add almost anything you like to your base of chickpea. We make sundried tomatoes and hummus with homemade pita chips for this recipe. It is easy. It is tasty. It is the best summer dip!

What is hummus?

Hummus is a traditional chickpea spread that we usually find in middle-eastern cuisine and, more generally, in the Mediterranean diet. The base of hummus is chickpeas, tahini (grounded sesame seeds), spices, and lemon. It accompanies many dishes such as stuffed pita bread in bowls or is eaten as a spread with multiple mezze. For this recipe, we are adding sundried tomatoes to add some tartness to the spread.

What are the benefits of chickpeas?

Chickpeas or garbanzo beans are a fantastic source of plant-based protein and fiber. Indeed, a cup of chickpeas contains 14.5g of proteins and 12.5g of fibers. They are also rich in minerals such as manganese, folate, and copper. Since chickpeas are rich in proteins and fibers, they help satiate you, slow your digestion, and regulate your blood sugar levels.

How to make homemade pita chips?

For this dish, we accompany our protein-packed spread with homemade pita chips/ You can buy them already made, but if you have some pita bread laying around,  cut them into bite-sized pieces, drizzle olive oil and the spices of your choice on top, and pop them into the oven. And voila!

Ingredients

Pita Chips

  • 2 pita bread
  • 2 tbsp olive oil
  • Salt
  • Pepper

Sundried Tomatoes Hummus

  • ½ cup sundried tomatoes in oil
  • 1 cup chickpeas
  • 1 tbsp tahini
  • 1 lemon
  • ⅓ cup kalamata olives
  • 1 tbsp olive oil

Method

Pita Chips

  1. Preheat the oven to 425F.
  2. Cut the pita bread into triangular shapes. Toss the bread with olive oil, salt, and pepper in a bowl.
  3. On a baking tray, add the evenly coated pita bread chips. Bake for 8 minutes (or air fry).

Sundried Tomatoes Hummus

  1. In a blender or food processor, combine the sundried tomatoes with the oil, the chickpeas, tahini, the juice of a lemon, and salt. Process until smooth.
  2. Transfer the hummus to a bowl. Create a well with the back of a spoon in the middle of hummus. Add the olives and a drizzle of olive oil.
  3. Serve with the chips.
