Is Chicken Healthy?

Chicken is a healthy source of animal protein. One serving of chicken breast (3oz or 85g) contains 24g of protein and 3g of fat. Chicken is rich in niacin (vitamin B3), selenium, vitamins B6 and B12. These nutrients help break down macronutrients and to turn them into energy, form DNA, and promote a healthy nervous system, amongst other things. However, if you are plant-based, feel free to swap the chicken for tempeh or chickpeas.

What are the benefits of eating bell peppers?

Bell peppers add color to the dish – or capsicum for my fellow Aussies- but are also packed with great nutrients and are low in calories (31 calories for 100g/3.5 oz). Bell peppers are high in vitamins A, B6, C, E, and K1. They’re also rich in folates and potassium. One red bell pepper can even provide 169% of the recommended daily dose of vitamin C! Carotenoids, essential antioxidants, are also abundant in bell peppers. They boost the immune system and are crucial for eye health and growth. Do not shy away from them! They are incredibly nutritious and super tasty! Paired with potatoes and chicken, they are part of a healthy balanced meal!



  • 2 bell pepper, sliced
  • 2 Russet potatoes, sliced lengthwise
  • 1 onion
  • 4 chicken thighs
  • 2 tbsp olive oil
  • Salt
  • pepper

Persillade (Garlic and Parsley Sauce)

  • 3 tbsp olive oil
  • 3 garlic cloves
  • 1 bunch parsley
  • Salt
  • Pepper



  1. Preheat the oven to 375F.
  2. On a tray add the vegetables. Drizzle 1 tbsp olive oil. Add salt and pepper.
  3. Cook for 15 minutes.
  4. In a pan on medium-high heat, drizzle olive oil. Once hot, sear the chicken on the skin side for about 6-7 minutes.
  5. Add the chicken to the sheet pan. Cook for an additional 15 to 20 minutes.

Persillade (Garlic and Parsley Sauce)

  1. Finely mince the parsley and garlic. Drizzle olive oil. Add salt and pepper.
  2. Once cooked, drizzle the sauce onto the chicken and vegetables.
