Easy Gluten Free Vegan Cookies

Hello my healthy cooks, this week I’m making super easy gluten free vegan cookies! Chocolate chip ones to be exact… You’ve all been asking for more vegan recipes and this one is a classic. We’re going completely refined sugar free, gluten free, and even substituting our chocolate chips for a better-for-you secret ingredient I love to use in my baking. Can you guess what it is?

This recipe is one of those where you’re just adding everything to a mixer and letting the mixer and oven do their jobs. Very little hands on time, but the hardest part will of course be letting them cool down enough to handle before you get them in your mouth!

What makes these Gluten Free Vegan Cookies healthy?

With this Gluten Free Vegan Cookies recipe, we’re focusing on the beauty of using vegan and gluten free whole food ingredients to create a baked good that tastes just as good, if not better, than something loaded with refined sugar and unhealthy oils! You’re left with a treat you could enjoy as a great snack, dessert, or even post-lunch sweet treat. The options are endless!

Plus we are using cacao nibs in this one in place of chocolate chips to up the antioxidants and cut down even more on refined sugars and oils. Try using cacao nibs anywhere you might use chocolate to give you a bitter note that helps counter the sweetness of the cookie.

Recipe: Easy Gluten Free Vegan Cookies

Servings: 8-10
Cost: $2-3 per serving

Cook Time: 10 minutes

Ingredients:

1/2 cup olive oil
1/2 cup maple
1 whole banana
1/4 cup chia seeds
1 cup gluten free flour
1/2 cup oat flour
2 big pinches salt
1/2 tsp baking powder
2 TB coconut milk
1/2 cup cacao nibs

Method:

  1. Preheat oven to 350 F/175 C.
  2. In a stand mixer or by hand whisk olive oil, maple, and banana on high speed for 4-5 minutes or until light and fluffy.
  3. Add in chia seeds and whip again, then add your flours, salt, and baking powder. Continue to whip or mix together. Right at the end add your coconut milk and cacao nibs and mix a couple more times just to combine.
  4. Spoon cookie dough onto a parchment lined baking tray. Bake cookies for 15-17 minutes (baking time will vary according to your oven), and then allow to completely cool on the tray before flipping them off the pan. Enjoy!
