An Easy Brunch Recipe: Easy Healthy Eggs Benedict

Hello Friends! In part one of our brunch series, I’m so excited to share with you one of my own epic favourites that combines things we all love about brunch: Easy Healthy Eggs Benedict! Who doesn’t love some crispy crusty bread, gorgeous poached eggs, a vibrant colorful pickle situation, and a healthy, buttery Hollandaise sauce. This is one that brings on that nostalgic diner classic of eggs Benedict, with a rich buttery sauce, crispy toasted English muffins, and a beautiful creamy poached egg.

My own version of this classic is my healthy eggs Benedict! It is really one of those recipes that takes some simple techniques, combines them, and what you get is one epic dish loaded with flavour. Just as much buttery richness as the original, but with a balance of textures and fresh colorful greens to brighten it up. There is also the option to add an additional protein of your choosing if you are not vegetarian, something like smoked salmon would be so gorgeous here!

Why this Easy Healthy Eggs Benedict is good for you

The classic Eggs Benedict is a bit of a rich indulgence, but that doesn’t mean you can’t whip up a healthier version at home! We know eggs are an incredible source of protein, and loaded with micronutrients (vitamins A, D, and B12) as well. You’ll get complex carbs from your English Muffin (provided it is a whole wheat variety!), plus an extra vitamin boost from the greens. And from the pickle we use apple cider vinegar which is a great antibacterial and antiviral to keep our immune systems strong!

The recipe is dairy and refined sugar free, and incorporates two great sources of healthy fats from avocado and olive oil which we all know are so vital for heart health and brain function.

To add even more protein, the addition of smoked salmon beneath those poached eggs would be an absolutely epic move!

Why this Healthy Eggs Benedict recipe is easy to make

The beauty of this recipe is that it takes a bunch of super simple techniques and ingredients and combines them into one delicious recipe perfect for a crowd.

You’ll want to prep your pickle first so it has a bit of time to brine, and the rest comes together in a matter of minutes! Take the ease of a poached egg (I have a great tutorial for you on that here), and while eggs are simmering you can whip up your easy avocado Hollandaise. Just toast your english muffins and top with your gorgeous sauce, the poached eggs, those vibrant greens, and a pinch of fresh chive.

Easy Healthy Eggs Benedict with Avocado Hollandaise

Ingredients:

2 English Muffins
4 Eggs
chives
fresh arugula

For the Cucumber Pickle:
1 Small Cucumber, peeled
Pinch of Salt
1 Tbsp Apple Cider Vinegar
1 Tsp Honey

For the Hollandaise:

1/3 Cup Extra Virgin Olive Oil (use your best stuff!)
1/2 Avocado
1 Tbsp Tahini
Juice and Zest of Half a Lemon
Pinch of Salt

Method:

  1. For the Cucumber Pickle, combine all the ingredients in a bowl and cool in the fridge for 20minutes.
  2. For the Healthy Hollandaise, combine all the ingredients in a blender or a food processor and blitz until smooth. It will be a buttery, tasty consistency, complete with that avocado creaminess!
  3. Bring a small pot of water to a boil on high heat and add the vinegar to stabilize the water before turning heat to medium. Crack in an egg and gently circle the water, allowing the white to cover the yolk. Once achieved, repeat with remaining eggs.
  4. Toast the muffins, before topping with pickle, eggs, and a drizzle of Hollandaise. Sprinkle with salt and chives! Enjoy.
