It has been inspired by a couple of you amazing people getting busy in the baking department making the Naturally sweet Coconut Muffins from my second cookbook The Healthy Cook.
This super simple recipe is all about that ‘wet’ plus ‘dry’ ingredient combination. Super simple, but I also want to teach you a trick on how you can magnify natural sweetness without adding anything. Thats right! You can make something sweeter by adding no sugar, meaning its much healthier for you and you have less ingredients to buy, double win. How is it Healthy?
This easy healthy gluten free snack recipe is all about ticking those nutritional boxes and minimizing damage on the insides. More importantly it also looks after your taste buds too. So as mentioned before you are going to learn how you can make ingredients naturally sweet by not adding anything, so that is a win in itself. These muffins include the goodness of Almond Flour obviously from almonds themselves so they are packed full of the good fats our brains and cells require to operate. Chia Seeds contain all essential amino acids, meaning they contain a lot of the necessary protein building blocks we require for muscle contractions and to repair damages tissue. Now we have talked about gluten free before and for those of you who can tolerate gluten, high five (I can-I just choose to minimize the amount), but for those of you can not, do not worry as this easy healthy gluten free snack recipe is perfect for you! It contains no gluten and instead is packed full of the goodness of protein and healthy fats.
Whats a Healthy Snack?
This is something that will tick both your hungry afternoon cravings and nourishing aspects too. You do not want something that is just going to keep your cravings happy as if you do not feel full afterwards your hormones are going to be asking for even more and we have all been in that cookie jar situation. A healthy snack should be full of nutrients, but also be easy to access with little fuss. So after making these in a big batch you are set for the week. That office desk time just got all the more enjoyable π
What is the one thing to learn from this Recipe?
My friends I want the biggest takeaway from this easy healthy gluten free recipe to be how you can create more sweetness from an existing ingredient! So you do not have to add more sugar, you do not even have to add more natural sweeteners like honey. As you will learn below by putting the strawberries in the oven first, you remove a little bit of their moisture. Now water dilutes flavor so if you take away the water the flavor is naturally enhanced! So in this case the natural sweetness of those strawberries!
Whats great is this trick does not just apply to strawberries it works with all fruit and vegetables and if you think about it, a strong reason why we love roasted vegetables too π

Naturally Sweet Strawberry Muffins
Prep Time: 5 minutes
Cook Time: 25 minutes
Cost: $7-10
Skill: Easy
Ingredients:
1 Cup of Strawberries, sliced
1 1/2 Cups Almond Flour/Meal
2 tsp Baking Powder
1/2 Cup Coconut, Shredded/Desiccated
Pinch of Salt
2 tsp Chia Seeds
2 Eggs
2 Tbsp Honey
1/3 Cup Extra Virgin Olive Oil (Cobram Estate is the serious goods)
1/2 Banana, mashed
Method:
- Preheat oven to 350 degrees F. or 180 degrees C. Line a baking tray with baking paper and evenly spread your strawberries our on the sheet. Sprinkle with salt and bake for 10 minutes or until slightly jammy
- In a large bowl combine your almond flour, baking powder, coconut, pinch of salt, and chia seeds and then using a spoon create a hole or well in the centre
- In another bowl whisk your eggs and mix in your honey and olive oil until combined. Pour into the well of the dry mix and then using a spatula fold it together.
- Add the mashed banana and the jammy strawberries and fold until the batter is well mixed.
- Grease 8 muffin tins or scrunch up baking paper to form the shape of a muffin mould and pour the batter evenly among the tin. Bake in the oven for 20-25 minutes, top with era jammy strawberries and a sprinkle of Coconut π
