An Easy Snack Recipe for Back to School: Peanut Butter Choc Bites

Hey friends, this one comes to you at the start of back-to-school season, but even if you’re not going back to school, I think you’ll enjoy this simple sweet little number — my easy peanut butter chocolate bites!

These are my ultimate easy healthy snack when it comes to the fall season. They’re packed with protein and healthy fats, incredibly versatile with whatever ingredients you have on hand, and of course tasty!

What makes these peanut butter bites easy?

The best and easiest factor when it comes to making these peanut butter chocolate bites is that they are only 4 ingredients, and you probably have them on hand already! The chocolate is of course completely optional, but makes them extra delicious, and they’ll work as healthy truffles for dessert too if you choose to completely cover them in your chocolate “ganache”.

All ingredients get placed in a food processor which does the work for you. The drizzling of the chocolate takes just a few seconds, and then the hardest part is waiting for them to firm up in the fridge for a few minutes before you can eat!

What makes these peanut butter bites healthy?

Loaded with protein and healthy fats from your almond flour and peanut butter, these peanut butter chocolate bites will keep you full throughout the day. They provide vitamins and minerals including B6 and zinc, as well as healthy fats which are great for brain and cardiovascular health.

I drizzled these easy peanut butter bites in chocolate at the end for some extra flavor and cheeky goodness, but feel free to leave the chocolate out or use 100% sugar-free chocolate to keep these ones completely refined sugar free. No matter how you coat them, they’ll be tasty little bites to keep you fueled throughout a busy day. You can also cover them in shredded coconut or hemp hearts, cacao, or even sprinkle with more sea salt!

These bites are completely refined sugar free (just check the chocolate you’re using), vegan, and gluten-free too.

The Color Code

The color code for these bites is… brown! Brown foods are diabetes-fighting, heart health boosting, and have minerals, fiber, and often complex carbs. They are great for brain health!

Recipe: Easy Peanut Butter Chocolate Bites

Ingredients:

1 cup almond flour
1 cup natural peanut butter (unsalted and oil-free is best!)
1/4 tsp sea salt
1 bar of your favorite dark chocolate (use any that you like!) cut into chunks

Method:

  1. In a food processor, combine peanut butter, almond flour, an sea salt until you reach a “wet sand” consistency. Dump out onto your bench and roll into balls. Mixture should stick to itself easily as the natural oils are released from the nuts.
  2. In a heat-safe bowl set over a pan of barely simmering water, melt down your dark chocolate, stirring gently throughout. You can also do this in a microwave at 30 second intervals. If using the pan + water method, don’t let the water touch the chocolate or it will seize!
  3. Drizzle chocolate over the balls and eat up!
