End of Summer Gluten Free Pasta

This gluten free pasta dish has got it all! It is a colorful celebration of the end of summer goodness you may be finding lately at the farmer’s market, with our hero ingredient… corn!

What I love, apart from the clean flavors, is the nourishing texture you get from every bite. The colour alone in this gluten free pasta is just so vibrant and inviting. This is one dish that is light but also nourishing and satiating. Perfect for an evening meal or even a mid-day lunch if you want to serve it cold. It works both ways!

 

What makes this gluten free pasta recipe easy?

Pasta dishes like this one could not be simpler. Just throw your pasta in to boil while you prepare the corn purée. Plating up is super fun and easy and there is so much texture behind the pasta with that delicious.

What makes this gluten free pasta recipe healthy?

I believe that pasta dishes should be simple as, and always tasty. But making pasta healthy isn’t hard either! My secret? Keep the ingredients simple, add in your favorite protein if you like, and incorporate a vegetable to keep things colorful.

With this, I’ve put my personal spin on it to also make this recipe Gluten Free for all of you who may be adopting that lifestyle. But feel free to adopt it to your own tastes and preferences, subbing for any kind of pasta you like!

Recipe: Gluten Free Pasta with Corn Puree and Feta

Prep time: 5 minutes
Cook time: 10 minutes

Ingredients:

2 cups corn kernels (fresh or defrosted from frozen)
1/2 cup crumbled feta
1/2 cup coconut milk
3 Tbsp extra virgin olive oil
1.5 cups dry gluten free pasta of choice
Sea salt
Black pepper

Method:

  1. Bring a large pot of water to a boil and add several big pinches of sea salt. Cook pasta according to package instructions, then drain. My chef tip? Cook the pasta 1 minute under, drain it, then shock it in ice water and re-combine it with your sauce afterward!
  2. While pasta cooks: in a blender, combine feta, coconut milk, thawed corn, 2 Tbsp olive oil, and a pinch of salt and pepper. Drain pasta and return to the pot. Toss with the sauce in a large skillet to “cook” the sauce into the pasta. 
  3. To plate, top the pasta with an extra drizzle of olive oil and a sprinkle of feta.
