Team! Today’s recipe is all about fresh and colorful pasta. You might never have thought of this, but what about adding beets to your pasta? Yes, you heard right. Beets. This recipe is simple and only requires a pot and a blender! Blend all of the ingredients for the sauce, cook your pasta, and voila: an easy, tasty meal! It is particularly great for the summer since it’s fresh and colorful!
Are Beets Good For You?
Beets do not just brighten your meal by adding a nice pop of color. They are nutritious. They are rich in folate, manganese, and copper. Folate (vitamin B9) is crucial in forming red blood cells, while manganese, a mineral, ensures healthy tissue formation, healthy bones, and blood clotting. Beets are also rich in nitrates which relax blood vessels and stimulate the blood flow.
Does Beet Improve Athletic Performance?
For years now, it has been believed that beet juice could boost performance and endurance while working out by improving blood and oxygen flow to the muscles. Studies on endurance athletes suggest that the nitrates present in beets could improve performance by up to 3% (if 300 to 500mg of nitrates are consumed 2 to 3 hours before working out). Combined with the carbs from the pasta and the protein from the tofu, this dish is an excellent pre-workout meal.
Chef’s tip: Adding Tofu To Your Sauces
My tip for sauces and, in particular, pasta sauce, is to use silken tofu. Silken tofu will give a beautiful creamy texture to your sauces while adding protein to your meal. The plus? Tofu is versatile and takes the flavors of the other ingredients used for the sauce!
Ingredients
Pasta
- 1 package rigatoni
- 2 medium beets, cooked
- 1 pack silken tofu
- ⅓ cup dill
- 1 tbsp mint
- 1 lemon
- salt
Toppings
- ¼ cup feta, crumbled
- 2 tbsp pine nuts, toasted
Method
- In a pot on medium-high heat, bring salted water to a boil.
- Cook the pasta according to the packaging.
- In a blender, blend the beets, tofu, a pinch of salt and herbs. Add the juice of a lemon.
- Once cooked, toss the pasta with the sauce.
- In a pan on medium heat, toast the pine nuts for about 5 minutes.
- Serve the pasta with crumbled feta, dill and pine nuts.
