Easy Immune-Boosting Butternut Squash Soup

Friends, some of you may know that soups like this butternut squash soup are among my favorite things to make as soon as it starts to get cold out. Soups, stews, curries, and the like are all such natural, go-to dishes that everyone can enjoy due to the versatility of flavor and the delicious ingredients you can add!

This butternut squash soup requires just 2 basic ingredients to make, and you can customize the spices and toppings to your liking! I love this one served up with some crispy kale and walnuts, but it would also be delicious with roasted chickpeas, fresh herbs, or even pepitas on top.

What makes this butternut squash soup healthy?

Butternut squash is packed with vitamins and antioxidants that are great for boosting your immunity and reducing inflammation. It’s great for the wintery months or anytime when the temperatures are changing, and will help boost your strength against things like the common cold!

Butternut squash packed with vitamin E, B6, folate, and manganese. It also provides more potassium per cup than banana! It’s also a complex carb and contains plenty of fiber to keep your digestion on point. It is a real life superfood!

What makes this butternut squash soup easy?

You can make the entire recipe in two easy steps: just ROAST and BLITZ! You’ll be done in the time it takes you to blend up the squash once it comes out of the oven, and have dinner on the table with very little prep time. It’s also incredibly cheap to make, requiring just a few simple ingredients.

You can even buy the squash pre-cut if breaking down a whole butternut squash isn’t your thing. If you do decide to cut into a whole squash, I recommend being extra careful and using a super sharp knife! This is one type of veg I do recommend peeling before using 🙂 Enjoy it friends!

Recipe: Easy Immune-Boosting Butternut Squash Soup

Ingredients:

1 large butternut squash, peeled and chopped into 1″ pieces
2 Tbsp olive oil
2 cups coconut milk (full-fat!)
1 cup veggie broth or water
1 tsp turmeric
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp cayenne (optional)
Kale chips, walnuts, fresh herbs, yoghurt, and/or roasted chickpeas to garnish

Method:

  1. In a roasting tray combine squash, olive oil, and all the spices. Toss together and pop into a 375 F oven for 25 minutes or until crispy.
  2. In a high powered blender, add coconut milk, broth or water, and roasted squash. You can also add more salt here to your tastes.
  3. Remove from blender and return to the stove to re-heat if desired. Serve with your favorite toppings!
