4 Egg Yolks

2 Tbsp Dijon Mustard

250ml Grapeseed or Neutral Oil

Pinch of salt

Pinch of Pepper

Juice of half a lemon


  1. Whisk yolks and mustard together in a large bowl.
  2. Gradually add the oil, whisking until the previous amount has incorporated…
  3. Continue to do so until all oil is mixed in and the mixture slowly ribbons off the whisk
  4. Mix in the salt, pepper and lemon juice
  5. Store in an airtight container/jar in the fridge.. the possibilities with this bad boy are endless!!!
