Ingredients: (serves 2)

2 tsp Olive Oil

4 Eggs

2 Tbsp Cottage Cheese

Pinch of Salt & Pepper

1 tsp Chili Flakes

1 Can of Black Beans

2 tsp cumin

1 tsp cayenne

Method:

  1. Pour the beans along with its juices into a small saucepan, add in the cumin, cayenne with a pinch of salt and pepper.
  2. Cover and bring to a boil on medium heat, turn to low and allow to cook for 10 minutes or until all the liquid is gone, stirring occasionally
  3. In a small frypan on medium heat add the oil and crack in the eggs, continuously whisking to break them up, allow to sit for a 10-15 seconds (allowing section to slightly harden before whisking again.
  4. Repeat until creamy, take off the heat whisk in the cottage cheese, season with salt, pepper and chili flakes and serve into two bowls with the black bean mix
