When eating a chocolate cake became good for you…
Ingredients
- 2/3 Cup Coconut Oil, melted
- 3/4 Cup Coconut sugar
- 4 Eggs, beaten
- 3/4 Cup, Cacao
- 2 tsp Vanilla essence
- 1 tsp Maca powder
- 2 tsp baking powder
- Pinch of salt
- 1 Cup Almond Meal
- 1/4 Cup shredded Coconut
- 2 Tbsp beetroot powder
- 2 grated carrots
METHOD:
- Preheat oven to 180 degrees C. (355 F), line your muffin trays with muffin/cupcake papers
- In one large bowl combine the coconut oil, sugar, eggs and vanilla, before whisking in the cacao, maca, baking powder and salt.
- Next gently fold in the almond meal, coconut, beetroot powder and carrot (at this time make sure you taste… its important to check the batter for quality ? )
- Pour batter into lined tins and bake for 25-30 minutes or until a knife comes out clean but still slightly wet, transfer to a cooling rack for 10 minutes and then… Happy Birthday!!! ?
