When eating a chocolate cake became good for you…

Ingredients

  • 2/3 Cup Coconut Oil, melted
  • 3/4 Cup Coconut sugar
  • 4 Eggs, beaten
  • 3/4 Cup, Cacao
  • 2 tsp Vanilla essence
  • 1 tsp Maca powder
  • 2 tsp baking powder
  • Pinch of salt
  • 1 Cup Almond Meal
  • 1/4 Cup shredded Coconut
  • 2 Tbsp beetroot powder
  • 2 grated carrots

METHOD:

  1. Preheat oven to 180 degrees C. (355 F), line your muffin trays with muffin/cupcake papers
  2. In one large bowl combine the coconut oil, sugar, eggs and vanilla, before whisking in the cacao, maca, baking powder and salt.
  3. Next gently fold in the almond meal, coconut, beetroot powder and carrot (at this time make sure you taste… its important to check the batter for quality ? )
  4. Pour batter into lined tins and bake for 25-30 minutes or until a knife comes out clean but still slightly wet, transfer to a cooling rack for 10 minutes and then… Happy Birthday!!! ?
