Ingredients
Juice of 2 oranges (~½ cup)
Zest of 1 orange
2 tbsp soy sauce or tamari
1 tbsp honey
2 cloves garlic, minced
1 tsp fresh grated ginger
1 tbsp olive oil
6 bone-in, skin-on chicken thighs
Salt + pepper
1 Tbsp Butter
Method

Combine all marinade ingredients in a bowl or ziplock. Add chicken thighs, toss to coat, and refrigerate for at least 30 minutes (up to overnight for max flavor).

Prehead the oven to 200°C / 400°F. Line a baking tray with parchment or foil.

Remove chicken from marinade (reserve the liquid for later- we are going to make an epic sauce!). Pat chicken lightly dry, season with salt and pepper, and place skin-side up on the tray.

Roast for 25-30minutes, or until skin is crispy and internal temp reaches 75°C / 165°F.

While the chicken bakes, pour the reserved marinade into a small saucepan. Simmer over medium heat for 5–7 minutes, or until it reduces to half the content. Remove from heat and whisk in 1 tbsp of butter to finish the glaze — this gives it a rich, glossy texture that you see in the video

Plate up the chicken and spoon over the warm orange glaze over the top. Finish with fresh herbs, sesame seeds, or chili flakes if desired.
