Everyone loves pancakes!!! So when a fellow Australian healthy legend is in NYC i couldn’t not mix the amazing view of the Hudson river and downtown NYC with one of the most Instagram-able tasty options… This is one of my go to options for a day of high intensity… if you are hitting a HIIT (High Intensity Interval Training) session, spin class, crossfit (me) or just know you are going to be very active then this is a great option… substitute where desired. “Protein Pancakes”

1 Cup Almond Meal
1 Scoop Protein Powder (go super natural… as best as you can(
Pinch of Salt
1 Egg
1 Tbsp Honey
1 Cup Almond milk
1 Banana, sliced
1 Tbsp Olive Oil

Toppings

Peanut Butter
Coconut
Chocolate Sauce

Method:

In a bowl combine the almond meal, protein powder and salt
In another bowl whisk your egg and add in your honey and almond milk
Add oil to a pan on medium heat and caramelize the slices a portion of the banana on both sides for 2 minutes.
Pour in the batter and cook for 2 minutes or until edges start to harden and get all epicly bubbly 😉 … get your flip on and cook for a further minute… Repeat with remaining banana & batter and serve with your favorite toppings 🙂
