You legends know how i feel about Colo(u)r!!!! Here is another simple way to be happy through lunchtime… its one of my staples and i recommend making the sauce in a big batch as it is super versatile… you can also sub out the peanut butter for almond butter or tahini if there are allergy concerns… all in all this bowl of healthy happiness is going to bring you some serious smiles 😉

1 Grain, 4 textures, 1 Protein and a sauce = #Winning

Ingredients (serves 2)

2 Carrots, Grated

2 Beetroots, peeled and grated

2 Handfuls of Kale/rocket

2 Chicken breasts, cooked to your liking

1/3 Cup Pecans

2 Tbsp Olive Oil

Sauce

2 Tbsp Peanut Butter

1 Tbsp Maple

1 tsp Sesame oil

Juice of half a lemon

1/2 Cup water

Method:

  1. For the super tasty sauce combine all the ingredients into a blender and blitz until combined… add an extra 1/4 cup of water if it is a little thick
  2. Add all salad ingredients to a bowl, top with sauce and mix

    Hey Dan, in the video you added some grain/starch, but it’s not listed in the recipe ingredients on this page. Will you please add it when you get a chance? Thanks

      It is Quinoa… but you can make whatever grain you would like 😀

    This looks yum but I’m not a real fan of chicken, what meat or veggie option could I use instead?

      Not a problem… two poached eggs are always a winner, my favorite alternative thought would be a fillet of salmon.. Do you like fish?
