How to get your kids to eat their veggies ?
Ingredients
- 1 Cauliflower, heads removed & halved
- 2 Zucchini, roughly chopped
- 1 Red Capsicum, seeds removed & roughly chopped
- Pinch of Salt
- 1 Tbsp Olive/Macadamia Oil
Tahini dressing
- 1 Tbsp Tahini
- 1 Garlic, finely chopped
- 3 Tbsp Olive Oil
- Juice of 1 Lemon cheek
- Pinch of Salt
- Pinch of Pepper
METHOD:
- Preheat your oven to 180 degrees C. 375 F.
- Spread all your vegetables evenly among a roasting tray or dish. sprinkle over the salt and drizzle with oil before giving it a quick toss and placing the oven to cook for 30-35 minutes
- Meanwhile combine all the tahini ingredients into a bowl and mix until combined. Alternatively place in a jar ensure it is closed tight and shake to combine
- Serve roast vegetables with leftover meat and tahini dressing
