In light of April Fools.. I want to take part in the joking nature around this unique day. No I did not do something crude to a family member. Instead I went against everything I am usually known for in my cooking ways and made something ridiculously unhealthy… well at least thats what the title indicates. I am making you a Healthy Brownie Recipe.
My friends if you were to take a bite out of these brownies as if it came out of a paper bag from the local bakery, you would be so stoked with your purchase. They taste everything like the fudg-iness, soft, rich-dark bitter chocolate tastes that we love. Yet the truth of the matter is this brownie is not like your usually brownie… and I don’t mean that from the perspective of how awesome it tastes, even though it does… more so what it is actually made of. If I told you this brownie’s base was in fact not butter or sugar but instead something found very common in mexican cooking, what would your first thoughts come too?
Yes my friends here we have a brownie that is made up of Black Beans… and you know what… its because of their amazing protein and fats that with each bite you capture the amazing fudge we crave!!!! The other ingredient we haven’t even touched on yet is the miso paste, the salty character of this dish. Firstly… yum!!! This idea came from a discussion I had from a very good friend of mine @KathrynBudig (Absolute Legend!) we were talking about the use of the caramel like texture of miso to use in a cake or a brownie to then exercise that salty sweet balance… (More to this cooking relationship coming soon). So after a few efforts I came up with the right balance, hence why you will see no salt required.

Do me a favour. After you make these brownies, and they really are so simple as put them into a processor or Vitamix and turn out on toe a baking tray, make them for your friends and family and do as I did and tell them they are salted fudge brownies. Once they let you know their thoughts tell them whats in it…. they wont believe its a healthy brownie recipe.
Yep 1000 times healthier than the title, but just as good if not better tasting what a serious win!

Health Facts:
Black Beans are packed full of plant protein, so added benefit there for the building blocks of your body. They are a great source of fiber too. Cacao is a rich antioxidant whilst miso is a fantastic for your gut
Ingredients:
1 1/2 Cups Black Beans
1 Egg
1/2 Cup Oats or Gluten Free Flour
2 Tbsp Cacao or Cocoa Powder
1/3 Cup Honey
1/3 Cup Coconut Sugar (or add extra honey)
2 tsp baking Powder
1 Tbsp White Miso Paste
1/4 Cup Coconut Oil
1 tsp Vanilla Extract
100g Dark Chocolate, melted
Method:
1. Preheat oven to 350 F (170 degrees C.)
2. In order as they come pop all these tasty ingredients into a Vitamix or food processor and blitz until combined
3. Grease a square 8” tin butter or extra coconut oil and using a spatula transfer that amazing mix into it.Smooth it out and push it all to the edges so it cooks evenly
4. Bake in the middle of the oven for 20-25 minutes or until knife comes out clean. Allow to cool for 10 minutes before slicing into squares. Finish by drizzling with melted chocolate
