Healthy and Easy Savory French Toast

French toast is one of those amazing recipes that we can customize in SO many different ways, so let’s bring on the savory french toast! This is such an epic one for a weekend morning, and to put a healthy spin on it I am introducing to you my colorful and healthy savory French toast with greens and avocado.

The great thing about this savory french toast recipe is that it’s loaded with ingredients that will make your taste buds and body so grateful for the goodness you’re giving it.

Why is this savory French toast recipe healthy?

Normally, French toast is a bit of a sugar bomb, but we have gone in a different direction today with some savory elements – avocado and kale! What a spin on a classic! The kale is loaded with antioxidant and anti-inflammatory properties, as well as fiber. 

But of course the star in this healthy savory French toast is that avocado, which adds a great source of healthy fats that our brains love to operate on, and are great for heart health and can help prevent weight gain.

One of my favorite things about this healthy savory French toast is that it’s the kind of dish that looks so full of goodness and effort when you serve it up, but really only takes about 5-10 minutes to put together!

Easy Savory French Toast with Kale and Avocado

Prep Time: 5 minutes
Cook Time: 15 minutes

Ingredients: Serves 2

2-4 slices sourdough bread (depending on how hungry you are!)

2 eggs
1 cup unsweetened coconut or almond milk
Pinch of salt
Pinch of black pepper
Olive oil for cooking
 
1 whole avocado, mashed or sliced
1.5 cups kale, roughly chopped
 
Method:
  1. Whisk eggs in a bowl with the nut milk, salt and pepper. 
  2. Melt olive oil in a frypan over medium heat. Dip both sides of the sourdough in the egg wash. Cook for 2 minutes on each side on the pan or until golden brown. Repeat with remaining slices.
  3. Transfer bread to a plate. Heat pan with another drizzle of olive oil and add chopped kale, seasoning with salt and pepper until just wilted, about 3 minutes.
  4. To serve, place two slices of toast down, add your mashed or sliced avo and greens, and drizzle with olive oil. Add another sprinkle of salt on top!
