Everyone loves to Snack… and with the Super Bowl coming up this weekend (Go Patriots) here is a super healthy and easy way to enjoy that textured crunch we all love!!! I reckon Bugs Bunny would be all over these Super Bowl Recipes Carrot Fries!

All you need is a touch of salt, pepper and the attitude of Olive oil and you are game on for this Super Bowl!!! I love to put these out on a board with a dip or just have them on their own. You might have seen them before on my Beet board so if you wanted to add a bit more color to your day you can check that out too.

With much less carbohydrates, more color and the nutrients of Beta carotene… You will have long lasting energy and your eyesight to view the game will be impeccable!!! Talk about doing serious justice for the big game! My only advice would be to make a good batch as I have learnt people are really surprised at how awesome they are… and when they hear they are carrot and not starchy white potato they feel compelled to just tuck in!

It has become a weekly ritual of mine to have prepped carrot fries in my fridge. So  all I do is preheat the oven, mix with the rest of the ingredients and bake. Talk about a win! You can also jazz it up a bit by adding herbs, or other spices to add some flair

Super Bowl Recipes Ingredients:

500g (1Lb) Carrots, ends removed and sliced into chips

Pinch of Salt & Pepper

2 Tbsp Olive Oil

 

Method:

  1. Preheat oven to 230 degrees C (450 F.)
  2. Combine olive oil, salt, pepper and carrots in a bowl before spreading evenly onto a baking tray
  3. Bake for 15-25 minutes or until the crispy edges appear, remove and allow to dry for 10 minutes
  4. Sprinkle with a little more salt an serve
