Ingredients

1lb (450g) Roma Tomatoes, sliced in half length ways

2 Tbsp Olive oil

2 Tsp dried Thyme

2 tsp dreid Oregano

1 Garlic Clove, crushed

Pinch of Salt

Pinch of Pepper

1 Tbsp Maple Syrup

Method:

  1. Preheat oven to 395 F. (200 degrees C.)
  2. Line a baking tray with baking paper and place the tomatoes cut side up. Drizzle over olive oil, and sprinkle with thyme, oregano, garlic, salt and pepper. Bake for 25-30 minutes or until jammy…
  3. Transfer tomatoes and juices to a blender and puree, then pour into saucepan on low heat add the maple syrup and reduce to 2/3 its original volume
  4. Allow to cool then store in an airtight contain/jar in the fridge… this is some serious tastiness 😉
