Holiday Paleo Pecan Pie

Friends you all have been asking for more delectable and slightly more healthy spins on your favorite indulgent holiday classics. Today I bring to you a gluten free and paleo pecan pie!

Here is one recipe I never thought I’d be able to recreate a healthy version of — the original is loaded with delicious holiday flavor but also uses ingredients I wanted to avoid in mine. Check it out, how you can make your very own at home with just a few simple ingredients and a no-knead crust!

That’s right we’re making a bit of a non-traditional crust with this one but infusing even more nutty goodness into it from the pecans, and using ingredients that make this one completely gluten-free, paleo and vegan!

And you know I am all about making recipes customizable so if you prefer to use a grass fed butter instead of coconut oil in this one, go for it! You can also customize the spice blend if you like, here I’m using cinnamon and nutmeg for the ultimate holiday spice flavor.

What makes this paleo pecan pie recipe healthy?

This recipe takes a typically very indulgent dish and make it just a little more lifestyle-friendly with some healthier ingredients that also take it up a notch flavor wise. The original holiday recipe uses corn syrup, which I’m swapping out for maple syrup, coconut oil and coconut milk to give it more nuttiness and maple-y flavor.

We’re also using a crust that’s completely free of refined sugar, made with just a couple simple ingredients including dates and pecans for natural sweetness.

What makes this paleo pecan pie recipe easy?

Typically pies require the dough to be made ahead of time for the crust, kneaded or blitzed and chilled for awhile before you can roll it out and actually make the pie. This takes out all the waiting time so that all you have to do is blitz, press, pour, and bake! Healthy Paleo + Vegan Pecan Pie

Prep Time: 10 minutes
Cook Time: 25 minutes
Serves: 8
Skill Level: Easy

Ingredients:

  • Crust:
    • 1 c pecans
    • 1 c dates
    • ½ c GF or paleo-friendly flour
  • Filling:
    • ½ cup maple syrup
    • ¼ cup coconut sugar
    • ½ cup coconut milk
    • 1 cup pecans
    • 2 tsp cinnamon
    • ¼ tsp nutmeg
    • ¼ tsp sea salt
    • 2 tsp vanilla extract

Method:

  1. Preheat oven to 350F. Melt coconut oil in a saucepan, and toast the pecans in it, over medium heat, for 1-2 minutes.
  2. Add maple syrup, coconut sugar, coconut milk, vanilla, cinnamon, nutmeg, sea salt. Stir to combine fully.
  3. Blitz all ingredients for the crust together and press into a pie dish or a square dish if you’re making bars.
  4. Pour ingredients from the filling into the tin atop the crust.
  5. Bake for 30 minutes or until firm.
