Protein Berry Bread Pudding

My healthy cooks, today’s bread pudding recipe is all about creating an epic brunch to wow a crowd, with only 2 minutes of work on your part. Very few dirty dishes with this one too, since you’ll be creating your batter in the same pan you use to cook the bread pudding!

What makes this bread pudding recipe healthy?

This refined sugar-free bread pudding recipe is loaded with antioxidants and micronutrients from our berries. These help to keep your immunity in check! We’ve also got coconut milk and walnuts for some healthy omegas (excellent for brain health)! We’re also using coconut milk in place of dairy so this is an epic dairy-free one to share with your family too.

And not to mention we’re using some vanilla protein powder to give this one an extra hit of protein- of course you can leave this out, but I love adding a bit of protein to any meal I can!

What makes this bread pudding bake easy?

This is the ultimate quick brunch bake to please a crowd. Just double or triple the recipe as you need to, pop everything in a baking dish, and into the oven it goes. 20 minutes later brunch is served up! Top it with your favorite seasonal fruits, a berry compote, and toasted nuts for some crunchy textural goodness.

Recipe: Protein Berry Bread Pudding

Ingredients:

4 slices sourdough – preferably a day old, since it will soak up the liquid that much better!
1/2 cup coconut milk (canned is best for this one, reserve a couple TB for the end to drizzle on top)
2 scoops of your favorite vanilla protein powder (you know I love my Athletic Greens!)
1/2 cup of the berry compote or jam – this is an epic one to use to hit those coconut notes!
1/4 cup walnuts, toasted, for garnish
pinch of salt
2 large eggs

  1. Preheat oven to 400F/200C. Add eggs, salt, protein powder, and coconut milk to a shallow baking dish (something like a 8×8″ baking dish or a veggie roasting pan works well, just need to contain the liquid you’ll be adding). Whisk together, then add your bread slices.
  2. Bake for 20 minutes.
  3. Top with jam, toasted walnuts, and an additional drizzle of coconut milk! You can also serve this with fresh berries and maple syrup or honey.
