Recipe: Protein Berry Bread Pudding
Prep time: 2 minutes
Cook time: 20 minutes
Skill Level: Easy
4 slices sourdough – preferably a day old, since it will soak up the liquid that much better!
1/2 cup coconut milk (canned is best for this one, reserve a couple TB for the end to drizzle on top)
2 scoops of your favorite vanilla protein powder (you know I love my Athletic Greens!)
1/2 cup of the berry compote or jam – this is an epic one to use to hit those coconut notes!
1/4 cup walnuts, toasted, for garnish
pinch of salt
2 large eggs
- Preheat oven to 400F/200C. Add eggs, salt, protein powder, and coconut milk to a shallow baking dish (something like a 8×8″ baking dish or a veggie roasting pan works well, just need to contain the liquid you’ll be adding). Whisk together, then add your bread slices.
- Bake for 20 minutes.
- Top with jam, toasted walnuts, and an additional drizzle of coconut milk! You can also serve this with fresh berries and maple syrup or honey.
