Ingredients
- 1 pack fettucine
- 2 salmons fillets
- 1 cup spinach
- 1 shallot, thinly sliced
- ½ cup parmigiano regiano
- 2 tbsp olive oil
- 1 lemon, juice + zest
- Salt
- Pepper
Method
- In a roasting tray, add your salmon, tomatoes, shallots, garlic, dill, salt, pepper, lemon zest, and juice with your olive oil. Roast in the oven for 8 minutes or until salmon is cooked and tomatoes are jammy.
- Bring a pot of salted water to a boil. Cook the fettuccine according to the packaging. Reserve 1 cup of pasta water.
- Add pasta to the roasting tray with 2 Tbsp of pasta water, add spinach, and mix. Season further with pepper and cheese. Add more pasta water if needed.
- Serve and drizzle over extra olive oil.
